The 6 hectares of olive groves benefit of a privileged sun exposure and a rich biodiversity. A special care is brought to the soil and the grass that covers the ground so that the microorganisms can do their job.
William is a olive grower since 2016 and has launched since the conversion to organic agriculture.
The olive groves are in the “Appellation d’Origine Controlée” (Protected Designation of Origin)area of ” La Vallée des Baux de Provence”. The olive oils produced express the natural flavours of the different olive varieties planted on the estate (Bérugiette, Verdale, Salonenque and Grossanne). We offer two types of olive oils both made from a mix of these four varieties.
« La verte » or “Fruity green”
The olives are picked at the beginning of veraison, not yet quite ripe, the aromas of cut grass and artichokes are very strong. It’s an ardent oil with a pronounced fruity characteristic, typical of the Vallée des Baux de Provence.
« La Noire ” or “Ancient taste”
At the time, once olives were transported in jute bags to the mill and stored in the attics, a natural maceration was carried out before crushing and releasing aromas of cocoa and black tapenade. We wanted to recover this taste with this version of oil by letting the olives macerate (without cooling) for a few days.
